When fresh peas are in season, I could have them for every meal. We are in luck now to have really good frozen peas all year round. The following is a quick stew like concoction using peas that my grandmother used to make since we always had a lot of ham needing to be used.

1-1/2 teaspoons butter
1-1/2 teaspoon corn or canola oil
¾ cup chopped onion and add a couple of diced scallions if you have them
1-1/2 teaspoon flour
3 carrots (about 6 ounces) peeled and cut into very small pieces
Salt and pepper; I often add ¼ teaspoon dried tarragon or thyme
1-1/2 cups fresh or frozen peas
1 cup small dice ham

Heat butter and oil in saucepan, add onion and scallions, sauté over high heat for 2 minutes. Add flour, mix well, cook for about 1 minute, add 1 cup water, carrots, salt, pepper and herbs. Bring to boil, cover and cook for 2 minutes. Add peas, cover and simmer gently for about 6-8 minutes or until the peas are tender. Add ham, bring to a boil to heat. Serve.
